Ingredients

    1 Box Jello Fat Free Sugar Free Pudding
    1 Banana
    Cool whip sugar free whipped topping (2 tbls)
    Low Fat Vanilla Wafers (two 2)
    2 cups skim milk

Directions

Make pudding as per directions on box. Measure, dump, stir and pour. You may choose to incorperate the 8 tbls of whipped topping into the pudding before chilling which will make the pudding creamy, or dollop it on top. Use dishes for portion control. Slice and add banana before chilling. Make sure the banana is completely covered to minimize browning... no air... no spoil.

Chill for 10 minutes. Done and serve.

We will call this a "theme" cooking dessert.

It is a smart variation on a triffle dessert recipe of my grandma Love's (Adeline). I was a chef early on and I simply modernized and whipped the calories out.

The reason that it is a theme dessert is that you can substitute the chocolate pudding (fat free/sugar free)... Chocolate/Banana is good. Straight up Chocolate Whip is good where you simply blend the chocolate pudding with the whipped topping and chill... No banana seriously cuts the carbs in the overall recipe. Serve this one substituting two rectangles of unsugared graham crackers not a whole sheet, unless you want to claim the calories. Vanilla is also great with banana/pinapple chunks or simply a can of fruit cocktail in juice with the juice completely drained. Tastes like summer! Refreshing and not your same ole', same ole'.

Don't buy the vanilla wafers or graham crackers unless you can keep your face out of the box while the dessert is chilling. Remember... anticipation!

    Incredible!
    This is a great recipe, very flexible, and you can adjust the ingredients to suit your tastes (I like more wafers in mine).
    I look forward to trying the variations listed above too. The whole family loves the basic banana recipe, it's a sweet healthy regular dessert of ours.

    made this with 1/2 cream 1/2 milk and used banana extract to lower the carbs and tasted great!!!...also made a pie crust out of almond meal butter and cinn and lined little cups before adding pudding...it was awesome and still lo carb - 8/9/07
