Ingredients

Mild Italian Sausage, Black Beans, Carrots, Onions, Pearl Barley, Diced Tomato
Directions
Preheat oven 350 degrees
1. Spray bottom of small casserole dish with pam and a thin coat of salsa or tomate juice
2. Saute diced onions in oil until clear. Add garlic and carrots.
3. Slice sausage into 1/2" slices and cook in onion/garlic/carrot mixture until thoroughly cooked. Add spices.
4. Add black beans, diced tomatoes and pre-cooked barley. Cook until most of the liquid has boiled off.
5. Layer 1/4 of sausage mixture into casserole dish. Layer 1/3 of cheese top with 2 tortillas.
6. Repeat step above two more times. Layer remaining sausage mixture and top with cheese.
7. Bake and serve.
