    11/2 tbls Moroccan spice blend
    1 skinless boneless chicken breast
    3/4 tbls olive oil
    1/2 can chick peas with a little bit of the juice
    1/2 can diced tomatoes also with a little bit of the juice
    1 white potato in 1/2 in cubes
    1/2 walla walla sweet onion chopped
    8 dried apricots chopped


Add oil to pot and brown chicken on medium for both sides for a couple of minutes also add onion to saute.

Remove chicken and add rest of ingredients except apricots.

Cut chicken into bit size pieces and add to pot.

Turn temp to low and stir and cover.

Let simmer for about 35 minutes, stirring occasionally.

Add apricots, stir and simmer aprox 10 more minutes.

Serves 2.
