Ingredients

    1 tsp sesame oil
    1 lb boneless, skinless chicken breast cut into small pieces
    1 medium onion, diced
    1 medium red pepper, diced
    1 TBSP reduced sodium soy sauce
    1 TBSP curry powder
    2 tsp coconut extract
    1 TBSP arrowroot powder
    6 small new potatoes, cut into small pieces
    1 package frozen spinach, thawed

Directions

Add oil to skillet and heat over medium heat, add chicken and cook until browned.

Remove chicken and set aside.

Add onion, pepper, soy sauce and curry powder, stir fry to soften onion.

Combine 1 3/4 cup water, coconut extract and arrowroot powder.

Add to skillet and bring to a simmer.

Add potatoes and chicken to pot and simmer until potatoes are tender about 10 - 15 minutes.

Stir in spinach, heat through and serve.
