Number of Servings: 6

Ingredients

    1 small potato, peeled and chopped
    1/4 cup zucchini, chopped
    1/4 cup green pepper, chopped
    1 green onion, sliced
    1/2 cup tomato, chopped
    1/4 cup mild banana pepper rings
    1 cup ham, cubed
    1/2 cup monterey jack cheese, shredded
    8 eggs, beaten
    3 T extra virgin olive oil
    1 T Mrs. Dash original salt free blend
    1/8 tsp. black pepper


Directions

Heat olive oil in large skillet over med. heat. Place potatoes in oil and sprinkle with pepper and seasoning blend. Cook until almost tender. Add zucchini, green pepper, and green onion. Continue to cook until crisp tender. Add ham, tomato, and pepper rings. Toss together. Pour eggs over ham and veggies. Reduce heat to low and cover. Cook until set. Sprinkle with cheese. Cut into 6 wedges.
