Ingredients
-
Spinach, fresh, 2 cup (wash well, remove stems)
Ground turkey, lean, 150 grams
Feta Cheese, 30 grams
Garlic, 1 clove
Basil, 10 leaves (use fresh)
Oregano, ground, 0.5 tsp (dried)
Parsley, 3 sprigs (use fresh, no stems)
Red Ripe Tomatoes, 2 tomato
Olive Oil, 1 tbsp
Pasta, 150 gram(s) (pasta calories included in recipe)
Directions
This dinner is 2 healthy servings and is easily adjusted.
Start:
Put salted water on for the pasta. Fry the meat, drain fat. Cut feta into small cubes or crumble, set aside along with the basil and parsley (which can either be torn up or cut up with scissors) to be added at the end, after cooking. Cut tomatos into small chunks, wash the spinach well and dry it in a salad spinner, tear it up and remove big stems. Crush or cut up the garlic.
While pasta is cooking in boiling, salted water, add ingredients to the pan with the meat. Toss around in the hot pan until the spinach wilts, add the drained pasta, parsley, basil and serve. Season with salt and pepper to taste (remember the feta will be salty). Serve with the feta on top. Yummy!
