Introduction

I took a basic pancake recipe and made it a little bit healthier by adding whole wheat flour and substituting the butter with canola oil. I took a basic pancake recipe and made it a little bit healthier by adding whole wheat flour and substituting the butter with canola oil.
Number of Servings: 6

Ingredients

    1 cup all purpose flour
    1 cup whole wheat pastry flour
    2 Tbsp sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 1/2 cup 1% milk
    2 eggs
    2 Tbsp canola oil
    1 tsp vanilla

Directions

Mix together dry ingredients in bowl, whisking to ensure completely dispersed.

Add milk, oil, eggs, into large mesuring cup and whisk until eggs no longer stick to whisk. Add vanilla and stir.

Pour wet ingredients into dry ingredients and mix gently until combined. Let sit for 15 - 30 minutes.

Heat griddle. Scoop batter 1/2 cup at a time and cook until bubbly on one side, then flip and cook until fluffy.

Serves 6. 1 pancake per person.

Note: you can make the pancakes smaller, using 1/4 cup batter each, then you would have 2 pancakes per person and a total of 12 pancakes.

    I added a tablespoon dark cocoa powder and 1/3 cup each of peanut butter chips and semi sweet chocolate chips since we were going to be eating on the run (no syrup in the car!) - 9/27/10
