Ingredients

    * Whole Wheat Flour, 1 cup
    * Oat Bran, 1 cup
    * Baking Powder, 1.5 tsp
    * Baking Soda, 1 tsp
    * Cinnamon, ground, 1 tsp
    * Lite Soy Milk, 1 cup
    * Vanilla Extract, 2 tsp
    * Water, 1 cup
    * Salt, 1/8 tsp
    * Splenda, 3 tsp

Directions

1. Place a medium-sized frying pan on low medium heat.
2. Combine all dry ingredients in a large bowl.
3. Add all of the wet ingredients and whisk only until just combined (should be lumpy).
4. Pour about 4 tablespoons of batter into the frying pan. Wait until bubbles form in the middle of the pancake and flip it over with a spatula. Cook until underside is golden brown and remove from pan. Repeat with remaining batter.

    Wow! I thought these were great. I've had it the past two mornings in a row. I omitted the cinnamon. It sure filled my craving for pancakes, without the calories. Note* These need to be cooked at quite a low heat, for longer than your typical pancakes. Otherwise, they'll burn. Thanks for the recipe! - 12/9/10

    Incredible!
    I'm always looking for a healthy pancake recipe that tastes great too. These were wonderful! I only got 15 out of the recipe which made them about 48 calories, but still great and also low sodium. Will definitely make them again. - 9/3/15
