Introduction
This is just something I threw together... it turned out pretty well though. Surprisingly. This is just something I threw together... it turned out pretty well though. Surprisingly.Number of Servings: 1
Ingredients

1 clove of garlic (chopped)
1/2 of a small zucchini (cut into chunks)
1/2 of a small yellow squash (cut into chunks)
1/4 cup of carrot (sliced)
Approx. 3 oz. of shrimp (I used frozen raw shrimp)
1/2 cup of snow peas
1 tsp of spreadable butter
1 tbsp of soy sauce
Directions
Add the butter or olive oil (I ran out of olive oil!) to a medium size skillet and heat over medium to medium-hi heat with the garlic. Add the shrimp and let them cook and turn slightly pink for a few minutes.
Add all of the vegetables at once... make sure they're cut close to the same thickness for even cooking. Cover. Cook until shrimp are done and vegetables are tender.
Add 1 tbsp of soy sauce and let heat and reduce for 1-2 minutes.
Makes a big bowl of stir-fry. Enjoy.
Note: I didn't have any rice in the house but I'm sure this would be great over a serving of white or brown rice.
