Ingredients

    1 pound dry pinto beans (or 5 cups canned)
    1 T salt
    4 tsp minced garlic
    2 tsp cumin
    1/2 tsp red pepper
    1/2 tsp black pepper
    1 c. chopped onion
    3 green onions chopped
    1/2 link of smoked sausage chopped fine
    1 can diced tomatoes
    1 bunch cilantro chopped
    1 jalapeno chopped
    water to cover beans

Directions

Rinse and soak dry beans overnight. Season with dry seasonings and cook beans until done. Add fresh ingredients and stew until ready to eat.

Yields about 10 cups of beans. Serving size 1 cup.
