Introduction
The lemon zest and poppy seeds create a nutty, crunchy side to sweet fish fillets before being quickly seared to perfection. With some roasted potatoes or steamed rice and perhaps some lemony veggies, it's a perfect summer meal. Ingredients

1 lb skinless striped bass, portioned into 4 fillets
1/2 tsp each Kosher salt and black pepper
Zest of 1 large lemon
1/3 cup poppy seeds
1 egg white, beaten
1 tsp olive oil
Directions
Place the fish fillets on a plate and season with salt and pepper.
In a small dish stir together the lemon zest and poppy seeds.
Brush the top side of the fillets with the egg white, then sprinkle with a generous amount of the poppy seed mixture.
In a large non-stick skillet, heat the oil over medium heat.
Add the fish, seed side down, and cook 2 minutes.
Flip fillets carefully and cook for another 2 minutes.
Serve over beds of spinach or lemon rice (or lemon-spinach rice!)
