Number of Servings: 2

Ingredients

    1 medium potato with skin
    1 T. vegetable oil
    salt and pepper to taste
    2-3 fresh basil leaves, chopped

Directions

Quarter potato, then cut it into 1/4" thick slices. Place in nonstick pan with oil and salt and pepper. Toss potatoes over medium heat until coated with oil and heated through. Spread potatoes out on baking pan or cookie sheet in a single layer and sprinkle with chopped basil leaves. Bake at 375 degrees F for about 30 minutes or until brown and crispy. Serve warm.

Makes about 2 servings.

    This was just yum. I doubled the potatoes, used olive oil, 1/2 teaspoon salt, ground black pepper, 1 teaspoon crushed red pepper & added 1 teaspoon dried basil while cooking the potatoes instead of sprinkling it before baking. Thanks a bunch. - 10/13/11
