Ingredients



    * Chicken Breast, no skin, 2
    * Chicken Thigh, no skin or bone, 6
    *Brown Rice, medium grain, 1 cup
    *Chicken broth, low sodium, 2 cups
    * Lemon Juice, .25 cup
    * Garlic, 2 tbsp
    * Ginger Root, grated 3 tsp
    * Balsamic Vinegar, 3 tbsp
    * Red bell pepper, 1 cup, chopped
    * Red pepper flakes, 2 tbsp
    * Water chestnuts, 0.5 cup slices
    * Scallions, raw, 1 cup, chopped
    * Celery, raw, 1 cup, diced
    * *Kikkoman Lite Soy Sauce, 3 tbsp

Directions

6 servings.
Spray inside of crockpot with non-stick cooking spray.
Save chopped celery, peppers, scallions and water chestnuts aside, and add them in the last 1/2 to an hour of cooking, depending on how crisp you want the veggies.
Combine all other ingredients in crockpot, cook on low for 5-6 hrs, depending on your model, to make sure chicken is cooked.
