Introduction
This is something my mom used to make for use all the time its got the crunchness from the celery and smooth cream texture from the artichokes. and it is sooooo goood! Ingredients

2 chicken breasts
2 boxes of rice a roni chicken flavored low sodium
2 jars of marinated artichoke hearts
2 jars of marniated mushrooms
1 cup of finely diced celery
6 tbsp of mayo (lite will do)
1 tbsp of curry powder
salt and pepper to taste
Directions
Make rice a roni according to instructions. boil chicken breast till they are cooked through then in a bowl filled with cold water shred. dice up mushrooms about 1/4 inch chunks do the same to the artichoke hearts. dice up celery very fine. once the rice is done add all the ingredients and chill. can be eaten warm but i myself prefer cold. serving size is about one cup
