Introduction

My daughter gave me this idea. I use it instead of margarine on my toast in the morning. You can also use it as a cream cheese replacement in recipes. It's not as creamy as cream cheese but it works just as well and has more protein and much less fat.     1/2 cup (125g) 1% cottage cheese

Directions

- Put cottage cheese in food processer.
- Process until creamy.
- Store in fridge

    I've used this for ages -- its GREAT!! Also, if you need a more firm consistency, you can let the cottage cheese drain some through cheese cloth or a coffee filter before processing. Mmmmm. - 5/15/08

    I was paying a lot of $$ for "farm style" cottage cheese, which is a lovely smooth block of creamy cheese. If I knew it was this simple to make I would have made it myself! Thanks! - 3/15/13
