Ingredients
-
1/2 cup orange juice (low cal)
4 tbsp brown sugar (dark)
1 peach
2 nectarines
6 litchis
1 cup blackberries
1 cup raspberries
*you can substitute the fruit for whatever you prefer. I used the fruit that was starting to go bad in my fridge.
Directions
1. Wash and cut fruit into small pieces.
2. Put a pan on medium heat and pour in orange juice. Immediately put in all fruit and stir so it doesn't scorch.
3. Add brown sugar and continue stirring.
4. When fruit gets soft and bubbly use a masher to smush fruit.
5. Then put the smushed contents into a potatoe ricer. You can skip this step, I just like to get the little bits of skin and hard parts out of my compote. using just a masher works great.
6. Put the contents back in the pan and bubble for about 15 more minutes, or until the texture isn't too liquidy.
Serves great on pancakes, ice cream, toast, among many other things! Always serve warm.
Makes 8 1/2-cup servings.
