Ingredients

1 cup(dry) brown basmati rice, Cooked
1 can black beans
1can whole kernel corn
1 chopped red pepper
1 bunch cilantro, chopped
1 red onion chopped
Salt and pepper to taste
1/2 c cider vinegar
3 T Agave syrup
1/4 c oil and 1/4 cup water-can use all oil
1 T lime juice
Directions
Mix rice, beans and vegetables in a bowl. Combine remaining ingredients and whip with fork to blend together. Pour over rice and vegetable mixture and marinate for 3-5 hours before serving. Makes approximately 16 3/4 c. servings
