Introduction

Ingredients

1 - 13 oz fat free angel food cake
2 - 8 oz containers of Cool Whip Free - thawed
2 cups of Orange Juice
1 cup of water
1/2 cup blueberries
1/2 cup raspberries
1/2 cup blackberries
1/4 tsp vanilla extract
1/4 tsp almond extract
Directions
1. In medium saucepan over medium heat, bring 2 cups of orange juice and 1 cup of water to a boil, stirring frequently
2. Add 1/4 teaspoon of vanilla extract and 1/4 teaspoon of almond extract to orange juice mixture, stirring occasionally
3. Lower saucepan to low heat and allow to simmer for 30-45 minutes until liquid has reduced from 3 cups down to 1 cup creating orange essence
While orange juice mixture is reducing:
4. Cut across angel food cake to make 2 pieces
5. Cut each half into 2 layers
6. Cut each layer into 6 equal pieces, making a total of 24 pieces
7. In large bowl or round casserole dish, place first layer of cake into bottom of dish
8. Divide blackberries, raspberries and blueberries into to equal groups
9. Add half of berries onto first layer of angel food cake
10. Once orange juice mixture is reduced, use a large soup spoon to ladle one spoonful onto each piece of cake, drizzle over berries and around sides of cake. This should be a very light covering, as you do not want cake to be soaked.
11. Cover cake, berries and fill in center hole with Cool Whip Free, making an even layer
12. Place remaining pieces of angel food cake in a circle on top of Cool Whip Free layer
13. Spoon orange essence onto each piece of cake and around sides, drizzle for a light layer
14. In center hole place a handful of berries, while reserving most of them until last
15. Spoon and layer second Cool Whip Free over cake and berries creating an even layer, spreading over sides if they are exposed. Depending on your container you may or may not use the entire second container of Cool Whip Free.
16. Place remaining berries on top of Cool Whip Layer
May be served immediately or placed in refrigerator to be chilled overnight.
