Ingredients

    4 Egg Whites
    1/2 cup canned black beans, drained
    1/4 cup salsa, as mild or hot as you like it
    1 ounce lowfat cheddar cheese, slice or shredded

Directions

Makes 1 serving
Heat the beans and salsa in a small sauce pan.
Fry the egg whites in a pan coated with cooking spray. Slice a few thin slices of the cheese.
Put bean mixture onto a plate, top with cheese, then eggs.
Goes well with some bread to dunk.

    I used the whole egg since I don't have many recipes for egg yolks and thus it add some extra fat and calories, but this was really tasty. Thanks! I will be making this again and again. I need more protein. - 6/29/08

    I used fat free refried beans instead, and 1 whole egg, fried in non-stick. I put everything on a seared tortilla, instead of adding toast. So, tortilla, refried, lowfat cheese, egg and a T more of salsa. Yum! a T added of low or non fat sour cream would have made it "ranchero." - 11/3/13

    Made this with what I had on hand. Used Black Eyed Peas, Rotelle/lime/cilantro/tomatoes, Half Grated Parmesan, Half Grated Chaddar. Also used 1 whole egg and 2 whites w a little S&P...Delicious!! - 12/18/11
