Nutrition & Calorie Comments  

I used fat free refried beans instead, and 1 whole egg, fried in non-stick. I put everything on a seared tortilla, instead of adding toast. So, tortilla, refried, lowfat cheese, egg and a T more of salsa. Yum! a T added of low or non fat sour cream would have made it "ranchero."
I used the whole egg since I don't have many recipes for egg yolks and thus it add some extra fat and calories, but this was really tasty. Thanks! I will be making this again and again. I need more protein.
