Nutrition & Calorie Comments  

Its a good recipe but I lightened it up because of the sodium content being a bit outrageous. Used fresh vegetables and half a can of fire roasted diced tomatoes.
Made this this evening and did a few things to add a little more kick. Not sure how many calories were added, but I add about 1/2 cup red wine, 1\2 cup broth because it seemed dry to me. I used the cumin but also added maybe 1/2 tsp of cinnamon, 1tbsp of Mexican oregano, 1 tsp sirache, awesome
Originally made this almost as printed except used 2 chicken breasts (about 12oz). Very good! It's a little dry using 10oz can Rotel, so now use 28oz can. I like to top it w/ nonfat Greek yogurt (it's like sour cream) and cilantro. Lots of veggies in this so portions are generous and satisfying.
