Introduction

Number of Servings: 10

Ingredients

    2 Tablespoons of Olive Oil
    1 Medium Onion (chopped)
    1 Medium Green Bell Pepper (chopped - ribs removed)
    1 12 oz Package of Lifelight Smart Ground Original (found in your organic refrigerated section of your mega-mart)
    1 28 oz Can of Petite Diced Tomatoes
    1 14.5 oz Can of Bush's Chili Beans
    1 14.5 oz Can of Light Red Kidney Beans
    1 Envelope of McCormick Chili Mix

Directions

Heat olive oil in a large pot, then add the onions and peppers until soft and just a bit of golden brown around the edges.

Add the Smart Ground - break it up and let it cook with the with onions and peppers for a minute or two.

Add the rest of the ingredients, bring to a boil and then turn town to a simmer for about 20 minutes.

Makes 10 hefty servings.
