Ingredients

    1 Cup Macaroni, whole-wheat,

    1 lb Ground veal

    1.2 cup Onions chopped,

    2 cups low sodium beef broth,

    2 oz low fat Mozzarella Cheese,

    1/4 cup ricotta,

    1 package (10 oz) Frozen Mixed Vegetables,

    3/4 t Thyme

Directions

Cook pasta, drain, and set aside.

In a skillet cook ground veal and onions until veal is fully cooked. Stir in broth, ricotta, and cheese. Stir in vegetables and the drained pasta. Stir until everything is combined. Transfer it to a 2 quart casserole dish. Bake, covered, @ 375 degrees for 30 minutes. remove cover and back for 5 minutes.

Optional and not included in calorie count: Top with crushed crackers after removing lid and continue to bake the last 5 minutes.

Also great with ground turkey!
