A different way to use apples if you are tired of pie or crisp. Nice a light -- custardy kind of.
Add nuts if you'd like (1 cup finely chopped) I omitted to keep calories down. Is good topped with ice cream or whipped cream.

Ingredients

    2 eggs
    1/2 cup sugar
    1/2 cup flour
    1 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp salt
    2 tsp vanilla
    2 cups pared apples, finely chopped

Directions

Beat eggs until light. Sift dry ingredients together and add to eggs along with vanilla and apples (and nuts if desired). Mix well, pour into ungreased 9" pie pan. Bake at 350 degrees for 25 to 30 minutes. Cool and serve.

    Very Good
    I thought this was a very good dessert!!! I am a big fan of apple pie and cobbler so this was a nice lighter way to eat that!!! - 9/30/10
