Number of Servings: 6

Ingredients

    1 lbs lean ground beef
    2 large bell peppers, cut into strips
    1 large celery stalk, chopped
    1/2 medium onion, minced
    1 cup no salt added diced tomatoes
    4 cups hot water
    1 beef boillon cube
    3 Tbsp worcestershire sauce
    1 garlic clove, minced
    1/2 tsp thyme
    1/2 tsp black pepper

Directions

1. In a large pot, cook graound beef over medium high until no longer pink. Drain fat if necessary.
2. Add peppers, celery, and onion and stir fry for about 5 minutes.
3. Next add bouillon cube, water, diced tomatoes, worcestershire sauce, garlic, thyme, and pepper.
4. Bring to a boil.
5. Reduce heat to medium low and simmer for 20 minutes.

Makes 6 servings

    This is a good soup to make when camping - easy and filling. As part of our Scout Leader training, this was one recipe that we had to make on a camp stove. When we had the youth do their cooking on weekend hikes, this was always one of their favourite meals. - 9/16/10
