Introduction

I was trying to figure out what to do with the sun dried tomatoes my youngest picked out at the store today and this is what i came up with. Hope you like it. Number of Servings: 4

Ingredients

    1 tsp vegetable oil
    1 medium sized onion
    2 cloves garlic
    8 sun dried tomato pieces
    3/4 cup quinoa

Directions

heat pan over medium
chop the onion and grate the garlic
add oil to the pan
add onion and cook until lightly brown
add the garlic and quinoa
stir until quinoa is coated in the little oil left
add sun dried tomatoes and enough water to cover all the ingredients
simmer on low to medium for 25 minutes or until quinoa is done to liking, adding more water as needed
