Introduction

Better and easier than fried chicken and much lower fat! Better and easier than fried chicken and much lower fat!
Number of Servings: 8

Ingredients

    1 1/2 lbs. chicken breast meat (pack of 3 chicken breasts)
    3 c. Corn Flakes
    1/3 c. low-fat buttermilk
    1/3 c. Parmesan cheese
    1/2 t. black pepper
    2 T. olive oil

Directions

1. Trim fat off chicken breasts and cut into smaller/thinner pieces about 3 ounces each.

2. In large bowl, measure the Corn Flakes, then crush until you have small crumbs. Stir in Parmesan cheese and pepper.

3. In small bowl, measure the buttermilk.

4. Dip chicken pieces in buttermilk, then roll in Corn Flakes mixture. Put into casserole dish (that has been sprayed with cooking spray.) Drizzle olive oil over the top.

5. Bake 30 minutes at 350 degrees.

Makes 8 servings.

    This was awesome!! My boyfriend thought I'd lost my mind when I bought buttermilk, but after it cooked, I had to run out a second and he got home. He called me and said how great it was. I told him afterwards the buttermilk was in it! def. will make this again! - 10/6/10

    O.K.
    My kids didn't like this. If we make it again, will cook the 30 minutes at 350 and then broil a few minutes on both sides so it's not so soggy. My son is a chicken mcnugget freak so I'm in search of a healthy, kid-friendly recipe. This wasn't it. - 10/9/10
