Introduction
You don't have to use the oil if you don't want to, you can use pam, but either way cooked sweet yellow plantains are so delicious.This recipe is just for cooking the plantain, but after it's cooked you can do so much w/ the plantains. You can add cinnamon and splenda, or for something more savory top off w/ ground turkey or chicken and a sprinkle of cheese after it's cooked.

Ingredients

1 Yellow Plantain with many black spots (the more black the better)
1 TB Extra Light Olive Oil
Directions
Heat a nonstick skillet over medium heat. While skillet is warming, cut the ends off of the plantain. Carefully run the tip of a knife down the length of the plantain and peel the skin away. Slice the plantain diagnolly about a 1/4" thick.
When skillet is hot, add the oil and allow to heat up. Carefull place the plantain slices on the skillet. Allow to cook for 5 minutes on one side, then flip them over and allow to cook for 5 minutes on the other side.
