Introduction

I needed to use my mangoes that were overripe to almost spoiled and I found this recipe which I adjusted to fit my needs. I needed to use my mangoes that were overripe to almost spoiled and I found this recipe which I adjusted to fit my needs.

Ingredients

    2 cups oats, ground
    1 tbsp baking powder
    1/2 tsp salt
    1 tsp cardamon powder
    1 1/2 cups mango, pureed
    1/3 cup canola oil
    1 tsp vanilla extract
    2/3 cups sugar

Directions

Preheat oven to 350 degrees. Prepare an 8 or 9 inch round baking pan with butter and dust with powdered sugar. Combine oat flour, baking powder, salt and cardamon powder in a bowl; set aside. In another bowl combine the mango puree, oil, sugar and vanilla. Add the flour mixture until incorporated, DO NOT OVER MIX. I did everything by hand to make sure it wasn't over mixed. Pour into prepared pan and bake for 20-25 minutes until a toothpick inserted in the middle comes out clean. Let cool in pan until sides of cake pull away from sides of pan. Invert on serving plate and let cool completely. Dust with powdered sugar. Enjoy.
