Number of Servings: 16

Ingredients

    Pie
    6 cups cooked sweet potatoes (peeled, boiled, and drained)
    1 cup Splends
    2 sticks "I Can't Believe It's Not Butter"
    2 tablespoon vanilla flavoring
    4 eggs
    Topping
    1 cup Splenda Brown Sugar
    1/3 cup "I Can't Believe It's Not Butter" melted
    1 cup chopped pecans
    2 ready-to-bake pie crusts

Directions

Preheat oven to 325 degrees. Spray Pam on 2 pie pans, put crust in pie pan and bake for 15 minutes. Peel, slice, and boil potatoes until tender. Drain. Add eggs, Splenda, and Vanilla using hand mixer. Pour into pie shells. Combine melted butter, Splenda Brown Sugar, and nuts in small bowl. Using a spoon, drop the mixture on top of the pies. Bake for 30 minutes. Makes 2 pies, 16 slices
