Ingredients

    Whisk the eggs. Add flour, flaxplus granola, sugar, baking powder as well as applesauce. Mix well with a spoon. Add mashed bananas and blueberries. Mix well.
    2 eggs
    1/2 cup applesauce (unsweetened)
    1/3 cup sugar
    1 cup whole wheat flour
    1 cup flaxplus granola (cereal from Costco- Nature's Path with pumpkin seeds)
    2.5 tsp baking powder
    2 large mashed bananas (or 3 smaller ones)
    1 cup blueberries (fresh or frozen)

    Great balance of carbs, protein and FIBER...filling and yummy!

Directions

Bake at 400 for 21-23 minutes; use Pam for muffin tin.
makes 6 large or 12 small muffins
Keep refrigerated after 1 or 2 days due to all the fruit. You can nuke it for a few seconds to eat warm. Yum!

    Very Good
    Great recipe! I love the granola! Only changes I made were to substitute prune puree for the applesauce (didn't have any on hand). Also I reserved a little bit of the granola to sprinkle on top of the batter before baking. My recipe yielded 12 muffins. - 1/24/09
