Introduction

I used store brand Large Eggs instead of the Eggland's Best. Makes a great apple cake, very moist and great for fall nights with fresh apples from the tree. Ingredients

    2 cups sugar
    1 1/3 cup canola oil
    2 large eggs
    2 1/2 cups flour
    1 tsp salt
    1 tsp baking soda
    1/2 tsp cinnamon
    3 cups apples, sliced in pieces
    1 cup chopped walnuts

Directions

Preheat oven to 350F. Spray 13x9 pan with cooking spray (we use canola). Combine all ingredients in a large bowl and mix well. Pour into pan. Place in the middle of the oven. Bake until toothpick comes out clean. Let cool and serve.

    This recipe is way to high in calories for me to try as is. Have you tried subbing applesauce for some of the oil, and splenda for the sugar? It wouldn't make much difference except in the calorie department. - 10/18/11
