1st I don’t measure, so I’m doing my best to provide the recipe for ya (so please season to taste). If you love black-eyed peas, but don't love to eat pork and want to cut back on fat/calories without compromising flavor - this is a great quick recipe. Ingredients

    6 Cups Dry Black-eyed Peas
    2 Large Smoked Turkey Legs
    1 Large White Onion
    3 Garlic Cloves
    Sea Salt or Kosher Salt (to desired taste)
    1 Tsp Spanish Paprika
    3 Tbsp Chives (I used dry Chives)
    2 Tbsp Olive Oil

Directions

No need to soak black-eyed peas, just sort out the black-eyed peas by removing any peas that are no good or any possible pebbles.

Then place black-eyed peas in pressure cooker

Chop Onion, Chives & Garlic and put into pressure cooker with black-eyed peas

Remove all of the meat from the smoked turkey legs and place into pressure cooker

Add the spices

Fill pressure cooker with water just enough so the ingredients are covered

Add the olive oil

Cover and cook on Medium or slightly above Medium Temperature. Once your pressure cooker starts to boil (make noise), time the black-eyed peas to cook for about 15/20 minutes

Once cooking is done, let pressure cooker cool, open and test for desired tenderness

Add a little more water, season to taste if you need to and place back onto the stove to simmer another 10/15 minutes without the lid

    Best black-yed peas recipe I have ever had. Loved the idea of the smoked turkey. I prefer turkey over ham and I will definitely try this recipe again. - 9/23/10
