Ingredients

    1 tsp EVOO
    1/2 Cup Chopped Onion
    2 cloves garlic, chopped
    1 (14.5 oz)can diced tomatoes
    1/2 tsp dried basil
    1/8 tsp salt
    Dash black pepper
    4 ounce pasta (angel hair or fettucini??)
    1 lb large shrimp (I use 16-17 LARGE shrimp) - peeled and deveined
    Fresh parsley (optional)

Directions

Heat oil in larghe skillet over medium heat. Add onion; cook until soft, about 3 minutes. Stir in garlic; cook about 30 seconds. Add tomatoes, basil, salt and pepper; bring to boilig. Reduce heat; simmer 20 minutes.

Meanwhile, cook pasta according to package directions.

Gently stir shrimp into tomato sauce; cook 2-3 minutes more, or until shrimp are pink.

Drain pasta; transfer to serving bowl. Top with shrimp marinara. Garnish with parsely, if desired.

Makes 2 NICE dinner size servings.
