This recipe is great for brunch, special-occasion breakfasts, or even just a big Sunday morning family breakfast, and requires no syrup!

This recipe is great for brunch, special-occasion breakfasts, or even just a big Sunday morning family breakfast, and requires no syrup!

Number of Servings: 8

Ingredients

    4 apples, cored, peeled, sliced
    1/2 C butter, divided
    1/2 C brown sugar, packed
    1/4 C pecans, chopped (opt)
    1 tsp cinnamon
    6 eggs
    1 C flour
    1 C milk
    3 Tbs sugar

Directions

Combine apples, 1/4 C butter, brown sugar, pecans and cinnamon in a microwave safe bowl. Heat on high 2-4 minutes, until apples are tender. Spoon into lightly greased 9X13 baking pan and set aside. Combine eggs, flour, milk, sugar and remaining butter; blend until smooth and spread over apples. Bake 25 minutes at 350 degrees until top is firm and juice is bubbly.

Serves 6-8 (nutrition info includes pecans)

Note: Works well baked in single-serving ramekins. Also try with whole wheat flour.
