Introduction

This is a lighter version of a tasty dessert my grandma used to make. I made several substitutions and it tastes great. And no, you cannot taste the zuchini! Ingredients

    1-3/4 Cups Betty Crocker Supermoist German Choc. Cake Mix (from 18.25 oz. box)

    1 Cup shredded unpeeled zuchini

    1/4 Cup Simply Smart Fat Free Milk

    3/4 Teaspoon Vinegar

    2 Tablespoons Unsweetened Apple Sauce

    1/2 Cup Eggbeaters

    1/4 Cup Nestle Tollhouse Semi-Sweet Mini Chocolate Chips

Directions

1. Preheat oven to 350 degrees F. Spray 8" or 9" round pan with baking spray that contains flour (like Baker's Joy), or spray with non-stick spray and use a small amount of cake mix to flour the pan. Add vinegar to milk and let sit for a few minutes (this makes a great substitution for buttermilk).

2. In large bowl, beat cake mix, zuchini, milk/vinegar, applesauce, and Eggbeaters with electric mixer on low speed until just moistened. Beat on Medium speed for 2 minutes, scraping bowl as needed. Pour into pan. Sprinkle evenly with chocolate chips.

3. Bake 30-35 minutes or until toothpick inserted into center comes out clean. Cool completely, about 1 hour.

4. Dust with small amount of powdered sugar if desired (calories not included). Cut into 8 wedges and enjoy!
