Ingredients

    3 eggs, slightly beaten
    2 cups sugar
    1 cup applesauce
    2 cups zucchini, grated
    1 tsp. vanilla
    2 cups flour, sifted
    1 tsp. salt
    1 tsp. baking soda
    2 tsps. cinnamon
    1/4 tsp. nutmeg
    1/2 tsp. baking powder

Directions

Combine and beat together 3 eggs, slightly beaten, 2 cups sugar, 1 cup applesauce, 2 cups zucchini, grated, 1 tsp. vanilla.
Sift together 3 cups flour, 1 tsp. salt, 1 tsp. soda, 2 tsps. cinnamon, 1/4 tsp. nutmeg, 1/2 tsp. baking powder.
Add dry ingredients to egg mixture and stir well.
Pour into 2 well-grease loaf pans.
Bake 1 hour at 325 degrees.
Yield: 2 loaves
1 loaf = 24 pieces

    I made this recipe three different ways today. As written for two loaves, added 1/2c mashed banana to another two loaves and the last two loaves I added 1/2c raisin. They all came out fantastic! My whole family loved it and now are already asking for me to make more. 6 large loaves gone in a day - 7/28/10

    If 1 loaf = 24 slices and the recipe makes 2 loaves, then the # of servings would be 48, not 24. So the calories would be 72.5 per slice, and so on... - 8/12/09
