Introduction

Ingredients

    2 large ripe bananas
    1/3 cup soft margarine
    1/2 cup granulated sugar
    1 egg
    1 egg white
    1/4 cup hot water
    1-1/3 cups whole wheat flour
    3/4 tsp baking soda
    1/4 raisins
    1/3 cup chopped pecans or walnuts (i used almonds)

Directions

Preheat oven to 375 and spray loaf pans with vegetable spray.
In bowl or food processor, beat bananas and margarine; beat in sugar, egg, egg white and water until smooth.
Combine flour and baking soda; stir into batter along with raisins and all but a few of the pecans, mixing just until blended. Do not overmix. Pour into pan; arrange reserved nuts down middle of mixture.
Bake for 35 to 45 minutes or until tester inserted into centre comes out dry.

Makes 2 mini loafs.

**First time I made them, I forgot to add the raisins and they tasted AMAZING.. so raisins are optional :)

    My kids loved this bread! My only suggestions would be that the recipe doesn't tell us how much nuts to set aside. - 10/6/18
