Introduction

This was always my favorite way for my mom to cook fish. Very simple and a favorite in my house as well. I dont use as much seasoning as my mom does to cut back on sodium some. Ingredients

    2 lbs Amber Jack/Red snapper (usually what we have on hand)
    1 stick of margerine (though 6 tbsp would have been plenty if not less than that)
    1 tsp Tony Chachere's seasoning

Directions

I cut fish into small nugget size pieces and toss with Tony's seasoning. Melt margerine in pan, then add fish and cook until lightly browned on all sides. Can take several minutes to cook depending on thickness of fish. Also I started with half a stick of margerine, cooked what fish would fit in the pan then added rest of margerine and fish, didnt need the whole 8 tbsp would have done fine with less (4-6 tbsp).

Makes 8 4oz servings.
