Introduction

Number of Servings: 8

Ingredients

    1 1/4 C Oat Bran
    1 C all purpose flour
    2 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp salt
    1/4 tsp baking soda
    2 very ripe medium bananas
    2 large eggs
    2/3 C sugar
    1/2 C sour milk (take 1/2 c. milk, add 1 tsp vinegar and let
    sit for 2 mins or until curdled)
    1/4 C unsweetened applesauce
    1 tsp vanilla extract

Directions

Preheat oven to 350 degrees. Spray 4.5x8.5 loaf pan with nonstick cooking spray and lightly dust with flour.

Combine all ingredients in a food processor. Mix until well blended, scraping the bowl at least once.

Bake until a toothpick inserted in the center of the loaf comes out clean, 55-60 mins. Let cool in the pan on a rack about 15 mins. Remove from the pan and cool completely on the rack.

Makes 8 1" servings.
