    3 boneless, skinless chicken breasts
    1 packet Good Season Italian Seasoning mix
    8 c fat free chicken broth
    3 c sliced carrots
    2 c sliced celery
    1 c chopped red onion
    2 T oregano
    2 T basil
    1 t salt
    1 T pepper
    1 can tomato paste


Makes about 8 1-1/2 c servings

Place chicken breasts in crock pot. pour over 2 c chicken broth and empty packet of italian seasoning mix. Cook in crockpot on HIGH for 2 hours. Break up chicken into pieces and add remaining ingredients for remaining 4 hours on HIGH.

Serve with a salad.

~ If you are away all day, you can just put everything in the crockpot, and break up the chicken when you get home (prior to serving). It is easier to break up the chicken before all of the veggies are in the pot, but it works either way.
