4 Tbsp miso paste
4 cups water
85 grams soba noodles
4.5 oz. extra firm tofu, cut into 1/2 inch cubes
1/2 cup scallions, chopped
1 tsp sesame oil
Salad Booster/sesame seeds, optional
Directions
Bring the water to a boil and add the miso paste. Stir to combine.
Add the soba noodles and cook for 4 minutes, or according to package directions.
Turn the heat off and add the tofu, letting it heat through.
Divide evenly into two bowls and top with sesame oil, scallions, and salad booster.
