Introduction

Low Sodium, high fiber and vegetarian Low Sodium, high fiber and vegetarian
Number of Servings: 19

Ingredients

    4 cups prepared black beans (My recipe)
    1 medium yellow onion, quartered
    1 medium sweet red pepper, quartered
    5 whole garlic cloves, peeled (add more or less according to taste)
    3 whole jalapeno peppers, quartered
    1 cup frozen yellow corn
    1 tsp ground cumin or to taste
    1 tsp cayenne pepper, optional
    1 tbl chili powder
    4 tbl flax, ground



Directions

1) Prehaet oven to 400
2) Spray cookie sheet with olive oil and set aside
3) In food processor add first 5 ingredients and process until coarsely chopped
4) Stir in corn, spices and Flax
5) Use 1/3 cup measuring cup to scoop black bean mixture onto cookie sheet. Use back of spoon to evenly distribute mixture. Allow 1 inch between patties.
6) Bake for 20-30 minutes or until hot and bubbly. If you want crispier patties, place under broiler about 30 seconds each side.
7) Cool for 5 minutes before removing from cookie sheet
