Introduction

Whole wheat version of the English classic Whole wheat version of the English classic
Number of Servings: 12

Ingredients

    1 1/2 C White Whole Wheat Flour
    1/2 C Whole Wheat Pastry Flour
    2 pkgs dry active yeast
    1 cup warm water (110 - 115 deg)
    1 cup water
    1/2 tsp baking soda
    1 tsp salt

Directions

Mix 3/4 cup flour in bowl with yeast and warm water. Blend until smooth, cover and leave until frothy, about 20 minutes.
Gradually stir other ingredients, beating until smooth. You should have a mixture like pancakes, or just a bit thicker. Add flour or water as necessary.
Heat a non-stick surface to med/med-high and put non-stick egg rings on surface to heat thoroughly.
Pour batter into rings, so it's about 1/2 in deep. Cook until dry on top, about 10 minutes.
Remove rings and turn crumpet over to brown on top.
Cool on wire rack.

    Incredible!
    I loved these! I couldn't find whole wheat pastry flour so I just used white wheat flour for everything and it tasted great. Also, I didn't have egg rings so I folded some DIY ones out of aluminum foil. It's so nice to be able to make a healthier version! Thanks for sharing! - 2/17/12
