Ingredients

1 cup light butter, softened
3/4 cup Splenda
3/4 cup brown sugar
2 tsp vanilla
2 eggs
1 1/4 cups all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1/4 tsp salt
3 cups Cascadian Farm organic maple brown sugar granola
1 cup quick cooking oats
1/2 cup chopped walnuts
** Optional 1/2 cup chocolate or peanut butter chips (not included in nutritional informaiton)
Directions
Heat oven to 350 degrees.
In a large bowl, beat butter, splenda, brown sugar, vanilla and eggs until light and fluffy. Add in flour, baking soda and salt until well mixed.
Stir in granola, oats, nuts and chocolate/peanut butter chips (if using). Drop by large rounded spoonfuls about 2 inches apart onto an ungreased baking sheet.
Bake 11-13 minutes, until lightly browned on the bottoms. Cool 1-2 minutes on the sheet and move to a cooling rack.
Makes about 30 cookies.
