Ingredients
* *Turkey Polish Sausage, 16 oz (remove)
* Mushrooms, fresh, 1 cup, pieces or slices (remove)
* Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 3 serving (remove)
* Onions, raw, 1 large (remove)
* Olive Oil, 5 tbsp (remove)
* White Wine, 6 fl oz (remove)
* Vegetable Broth, 4.5 cup (remove)
* *Arborio Rice (Risotto Rice), Dry, Uncooked, 2 cup (remove)
Directions
Remove sausages from casings and saute in oil. Add to crockpot. Saute diced onion and red peppers (1 fresh, 1 marinated roasted) in oil and add to crockpot. Sautee mushrooms in oil. Add in rice and toss to make sure all grains are coated with oil. Add in wine and simmer for a few minutes. Add to crockpot. Add broth to crockpot. Add in tomato paste. Cook on high for 2-3 hours and serve. Add salt, oregano, or basil as desired, along with fresh parsley garnish.
