Introduction

Had to make an adaptation to use what was on hand.
This worked out really well, because the extra unsweetened cocoa and chocolate gave it more depth and less sweetness.
I find 1/2 serving of this is enough for me. It keeps the calorie count down and does not leave me drooling while the others eat it.
Great to make the day before and keep in refrig.

Ingredients

    1 layer of an 8 inch homemade yellow cake (1/2 of a cake)
    1 box (serves 6) cooked chocolate pudding
    3 TBS unsweetened dry cocoa powder
    1 square unsweetened chocolate (1 oz) chopped
    3 cups skim milk (made from powder, adding 1/4 cup extra powder to make it richer)
    1 can cherry pie filling
    1 1/2 cups cool whip light (defrost ahead of time)
    2 TBS dark chocolate ice cream topping

Directions

Cut up a single layer of yellow cake into squares.
Make the chocolate pudding, adding the extra chocolate powder and square as you cook it. In a decorative glass bowl layer part of the cake, pudding, and cherries, then do another layer in the same order. Reserve some pudding and some cherry filling to decorate on the top. Top the final layer with cool whip, I make a pattern with it. Then add the remaining pudding and cherries. I drizzled the whole thing with 2 TBS melted chocolate syrup as well.
