Introduction
This was an experiment gone wrong, that turned out really nicely. I had intended to use 1/2 cup of the quinoa, but the whole batch I had cooked fell in with the turkey, so I went with it. The kids LOVED finding quinoa in their meatloaf muffins, the texture mimics ground turkey so you barely notice it is in there. This was an experiment gone wrong, that turned out really nicely. Ingredients

1/2 yellow onion
1 tsp Canola
3/4 cup quinoa - washed
1.5 cup water
1.25 pounds Ground Turkey
1 cup frozen spinach
1/2 cup ketchup split in half
1 egg
2 tbsp milk
1 tsp Worcestershire sauce
.5 tsp Montreal Steak Seasoning (or any seasoning you like for Meatloaf Salt and pepper, sage and paprika are good)
Directions
Saute onion in Canola oil until carmelized
Cook Quinoa in water 10 minutes
Mix the rest of the ingredients using half the ketchup, then add onions and quinoa, put the mixture in a 12 muffin pan. Top each with a swirl of the remaining 1/4 cup ketchup.
Cook at 400 for 20-25 minutes until internal temp is 170
Makes 12 meatloaf muffins (most adults will eat 2 servings)
**Note, you don't need to caramelize the onions, but it is a step I strongly recommend. It changes the flavor completely.
