Introduction

Ingredients

    1 med. onion, chopped
    2 garlic cloves, minced
    1 T. extra virgin olive oil
    2 cans (15 oz. each) cannellini beans or navy beans, rinsed and drained
    1 can (15 oz.) garbanzo beans (chickpeas), rinsed and drained
    2 c. low-sodium, fat free chicken broth
    1 can (4 oz.) chopped green chiles
    1 1/2 tsp. ground cumin
    1/2 tsp. dried oregano
    1/4 tsp. salt
    1 T. dried cilantro


Directions

*In dutch oven or soup pot, saute the onions and garlic in olive oil until tender. Add the beans, broth, green chiles, cumin, oregano, salt and cilantro. Stir well. Bring to a boil over med-high heat. Reduce heat to low and simmer 30-45 minutes, stirring occasionally.

Serve hot topped with reduced fat shredded cheese and light sour cream, if desired. (cheese and sour cream not included in nutritional information). Yield: 8 servings (1 cup each)
