Ingredients

1/4 C Very finely chopped Onion
2 Tbsp Margarine
1/4 Cup all purpose flour
2 C fat free milk
1/2 C white wine
2 oz light velveeta
1/2 C (2 oz) reduced-fat sharp cheddar cheese
1/4-1/2 tsp dry mustard
1/2 tsp worcestershire sauce
White and cayenne pepper to taste
(optional 6 slices sour-dough or multi-grained bread, butter flavored vegtable spray, 6 thick slices of tomato)
Directions
Makes 6 servings
1) Saute onion in margarine in medium saucepan until tender, (2-3 min) Stir in flour and cook over med heat stirring constantly (1 min). Whisk in milk and wine; heat to boiling. Boil, whisking constantly, until thickened (about 1 min)
2) Stir in cheeses, dry mustard and worcestershire sauce; cook over low heat until cheeses are melted. Season to taste with white and cayenne pepper.
3) Spray both sides of bread with cooking spray; cook over medium heat in large skillet until browned (2-3 min) on each side. Broil tomato slices 4 inches from heat source until hot through; arrange bread on plates; top with tomato slices and spoon cheese sauce over it.
